Hard Feta PDO Cheese


This is a Greek Feta cheese PDO (Protected Designation of Origin) with a maximum moisture content of only 50%. The decrease in moisture gives this Feta cheese a strong flavor and a more hard and crumbly texture.
This cheese benefits from extra maturation time (minimum 4 months) which allows its proteins to break up into short chain ones and peptides; giving extra flavor and aroma.
The unique characteristics of this cheese have been internationally recognized and awarded at the 2016 Great Taste Awards Competition in London with two stars.
Our FETA cheese is produced from sheep and goat’s milk sourced from local farmers according to the legislation regarding FETA Cheese PDO (EC/ 1829/2002)


White Cheese with Linseed


This is a white cheese made from local sheep and goat’s milk with the addition of organic crushed linseed (flaxseed).
This is the first product of our upcoming series of fortified cheeses which aim to combine the cheese flavor with that of additional ingredients; mainly super foods to add beneficial nutritional values in a convenient way to the everyday culinary habits.
Linseed is rich in omega-3 and omega-6 fatty acids and its consumption contributes to the maintenance of normal blood cholesterol levels.
The innovative character of this product has been internationally recognized and awarded at the 2016 Great Taste Awards Competition in London with one star.

The application for this product's health and nutritional claims labelling is being processed.

White Cheese with Honey


This is a white brine cheese made from local sheep and goat’s milk with the addition of encapsulated Greek honey.
The process of encapsulation is well known among food technologists and chemists for preserving the characteristics of sensitive ingredients.
The sensitive ingredient (honey) is incorporated within the shell of another substance (alginate and/or casein). The shell provides protection, in the case of cheese against the moisture and the acidic environment during cheese production and maturation, and the honey's flavor is released only at the time of consumption, giving a unique taste experience.

White Cheese with Watermelon


This is a white brine cheese made from local sheep and goat’s milk with the addition of encapsulated fresh squished watermelon juice. The process of encapsulation is well known among food technologists and chemists for preserving the characteristics of sensitive ingredients.
The sensitive ingredient (watermelon juice) is incorporated within the shell of another substance (alginate and/or casein). The shell provides protection, in the case of cheese against the moisture and the acidic environment during cheese production and maturation, and the watermelon's flavor is released only at the time of consumption, giving a unique taste experience.

All our cheeses with encapsulated ingredients are carefully sliced by hand into 200g weighted slices, which are vacuum packed into laminate films for protection against light and oxygen and finally inserted into their characteristic carton cases aiming to deliver all their flavor and taste.
